The choice of cheese is key. The cheese should be firm enough to hold its shape, yet soft enough to melt nicely during frying. Some of the best options are:
Edam – the most classic choice, with a neutral flavor.
Gouda – slightly richer in taste, which complements the breading nicely. This is also the one I used.
Block mozzarella – an excellent choice for cheese sticks and snacks.
Tips for perfect crispiness
Double coating – Creates a thicker, crunchier crust. After the classic breading, dip the cheese once more in the egg mixture and breadcrumbs.
Freezing – Freeze the breaded cheese briefly before frying to make it firmer and prevent it from leaking during cooking.
Correct oil temperature – If the oil is too cool, the coating will absorb it and become greasy; if too hot, the crust will brown too quickly while the cheese inside won’t have time to melt.
What to serve with fried cheese
Fried cheese can be served in many ways – as a main dish, for gatherings, or as an appetizer. The choice of side depends on how you serve it. We suggest:
With tartar sauce and fries, or for a lighter version, a simple tomato dip.
With a fresh vegetable salad or pico de gallo for a fresher, lighter meal.
As a snack with beer or wine, accompanied by various dipping sauces (e.g., salsa, aioli, or yogurt ranch).

How do I prevent the cheese from leaking during frying?
Use a double coating and properly heated oil. If you like, freeze the cheese for a few minutes before frying. This ensures success.
Can I prepare fried cheese in the oven or air fryer?
Yes. For a healthier version, lightly spray the cheese with oil and bake in the oven at 200 °C / 390 °F for 15 minutes, or in an air fryer for about 10 minutes. Keep in mind that it won’t be as crispy.
Can I prepare it in advance?
Of course. You can freeze the breaded cheese and fry it only when needed. This way, it will always be fresh and crispy.
What about freezing?
We don’t recommend storing already fried cheese, but you can prepare it in advance, freeze it, and fry it when you want. Freeze for up to 3 months in a freezer bag or suitable storage container.
How do I reheat the cheese?
If you have leftovers or your guests are late, place the cheese on a baking tray lined with parchment paper and heat in a preheated oven at 100 °C / 210 °F for 15 minutes. This will melt the cheese again and make it soft.
